It’s surprising to me that I don’t have too many salad dressing recipes on the blog. I tend to make new dressings at least a couple times a week I just need to be better about writing down the ingredients I’m using. Making a homemade salad dressing takes a salad from average to amazing and I can’t stress enough how easy they are to make.
I made buffalo chicken tenders the other night (I can’t wait to share that recipe) and couldn’t imagine them without some creamy ranch, so I decided to try to make one. I have a similar recipe that I used on my BBQ Chicken Salad, but this one is a bit different and definitely my new go-to when I need some ranch in my life. It’s also really nutritious, made with cashews, fresh herbs, lemon juice and healthy spices. It’s not every day you’re going to find a dressing that actually adds nutrition to your dish, especially in the world of pre-made bottled salad dressings.
This recipe is nutritious but also really easy. The hardest part is probably remembering to soak you cashews before making it, which is a must if you want to achieve a creamy ranch. Other than that, just place all your ingredients into a blender or food processor and you have an amazing salad dressing or dipping sauce. Enjoy!
- 3/4 cup raw cashews (soaked in water for at least 30 minutes prior to making the dressing)
- 1 tsp apple cider vinegar
- 2 tsp fresh lemon juice
- 1/2 tsp salt
- 1/4 tsp fresh ground black pepper
- 1/4 tsp onion powder
- 1/4 tsp garlic powder
- 1 tbsp fresh parsley
- 1 tsp dried basil
- 1 garlic clove
- 2-3 tbsp water depending on how thick or runny you like your dressing
- Place all of the ingredients (except for the water) into a blender or food processor
- Blend until smooth - adding water as needed and to your taste
- Taste for seasonings - add more salt if needed
- The dressing will keep sealed in a container in the refrigerator for up to a week
