Monday is made for brownies, right? I personally am craving all the sugar, but it’s the last thing I need after being in Denver for 9 days. For being out of town, I did a pretty good job at not going out to eat all the time but it still takes its toll after a while no matter how healthy you think you’re eating. It will feel so good to get to the grocery store today and start cooking at home!
I’m pretty excited to share this recipe with you today. I may be craving all the sugar, but these guys hardly have any, with just 2 tablespoons of maple syrup in the entire recipe. I couldn’t believe something with so little sugar could taste so good, and I think you’ll love them! Unlike their real, sugary counterparts, you feel pretty awesome after eating these brownies. No sugar headache, no crash, and no guilt. They’re also vegan, full of healthy fats and made with almond flour making them grain and gluten free.

- 3 oz unsweetened baking chocolate - 3 oz is equal to about 1/2 cup
- 3 tbsp coconut oil
- 1/4 cup arrowroot flour or starch - I like Bobs' Red Mill Brand
- 3 tbsp water
- 2 tbsp maple syrup
- 1 tsp vanilla extract
- 1/4 tsp salt
- 1 tsp baking powder
- 1 1/4 cups almond meal - I like Bob's Red Mill Brand
- 1/4 cup chocolate chips - 2 tbsp inside the batter, 2 tbsp sprinkled on top of the batter in the pan
- Preheat your oven to 350 F.
- Line an 8x8 baking pan with parchment paper
- In the microwave, melt the coconut oil and baking chocolate together in a small bowl
- In a medium-sized bowl, whisk together the maple syrup, arrowroot flour and water
- Add the melted chocolate to the arrowroot mixture and whisk to combine
- Add the vanilla extract and salt to the chocolate mixture and combine
- Add the almond flour, baking powder and 2 tbsp chocolate chops and stir to combine until everything is well incorporated
- Pour the batter into the lined baking pan and sprinkle with remaining chocolate chips
- Bake for 20 minutes, then let cool completely before cutting
