You guys! It’s been SO long since I’ve posted here. Life with these twins can be crazy and finding time to post recipes and other life posts just hasn’t happened. As most of you know I am pregnant with our third little guy (29 weeks – I will post a pregnancy update soon) so that’s also taken up some of my time and energy, but I really wanted to pop on and give you this banana bread recipe that I promised a while ago. Having toddlers means having bananas, and I find myself buying extra every week just so I have brown bananas for this bread. The boys love it, Mitch and I love it, and in my eyes, it’s pretty much guilt free. Yes, there’s a 1/4 cup of maple syrup in there, and quite a few chocolate chips, but I don’t feel guilty eating this bread, and you shouldn’t either 😉
Also want to mention that it’s been my goal to post more recipes, but I realized the main reason I haven’t been posting is because I don’t have the time to take pretty, professional-looking pictures with my good camera. It’s a long process that requires editing and I’m just going to have to live with iPhone pics if I want to post any recipe content. I’ve been making so many yummy, EASY, quick meals since becoming a mom, and I need to share them with you.
A few notes on ingredients:
If you want to lessen the sugar content – omit the maple syrup, or use 1/8 cup
If you want regular chocolate chip banana bread, just omit the cocoa powder (chocolate chips too if you want plain banana bread)

- 2 large, ripe bananas
- 2 eggs
- 1/4 cup maple syrup or honey
- 2 tbsp coconut oil - melted
- 1/4 cup natural almond butter or peanut butter (look for a label that is just almonds and salt, or peanuts and salt)
- 1 tsp vanilla extract
- 3/4 cup almond flour
- 1/4 cup coconut flour
- 1/4 cup cocoa powder
- 3/4 tsp baking soda
- 3/4 tsp baking powder
- 1/8 tsp salt
- 1 cup chocolate chips (I love EnjoyLife mini dark or semi sweet morsels) plus some for sprinkling on top
- Preheat oven to 350 F.
- Grease a bread pan with butter or coconut oil and line with parchment paper (optional but I like doing this so there is no sticking to the bottom)
- In a medium size bowl, mash your bananas
- Melt your coconut oil in a microwave safe dish, then add maple syrup, eggs and vanilla and whisk until combined
- Add the egg mixture to the bananas, then add your almond or peanut butter and stir to combine
- Add almond flour, coconut flour, cocoa powder, baking soda, baking powder, and salt and stir to combine
- Fold in chocolate chips
- Add the batter to your prepared bread pan and sprinkle with chocolate chips
- Bake for 45 minutes and enjoy!
