Waffles! Last week I woke up craving waffles and was so thankful I impulsively purchased a waffle iron a couple of weeks ago. I’ve been trying to use less almond flour lately and I had a lot of ripe bananas, so I decided to try a coconut flour banana waffle and they were sooo good. And easy. All you have to do is mash your bananas, add the remaining ingredients and stir, and your healthy, grain and gluten-free waffles are ready to go.
The recipe makes 4-5 protein and healthy fat-packed large waffles and they lasted me all week. Whenever I was hungry I grabbed one from the fridge and either ate it cold or heated it up and added butter or more almond butter for a satisfying, nutritious snack. You and your kiddos will love this healthy, paleo waffle and I can’t wait for you to try them!
- 2 large bananas - mashed
- 5 eggs
- 1/2 cup almond butter or peanut butter
- 1/4 cup melted coconut oil
- 1/2 cup coconut flour
- 2 tsp cinnamon
- 1/4 tsp nutmeg
- 1/4 tsp salt
- 1 tsp baking soda
- 1 tsp baking powder
- 1 tsp vanilla extract
- sliced bananas, real maple syrup, honey, butter or peanut or almond butter for serving
- Using a fork, mash your bananas in a large bowl
- Add the remaining ingredients and whisk to combine
- Preheat your waffle iron
- Brush a bit of melted coconut oil or butter onto your waffle iron, then ladle about 1/2-3/4 cup of batter onto the waffle iron and close until your iron says they are ready (every waffle iron is different so this will vary)
- Repeat for the remaining batter
- Serve with sliced bananas, maple syrup, honey, butter or peanut or almond butter
