You guys! I got a new camera and I am so excited. I took about 100 pictures today of these blondies (a blonde brownie – no cocoa powder) and about 5 turned out, but it was fun nonetheless. Miss June was a pretty good model during some camera testing too.
These blondies are delicious. They’re paleo, so no flour was used and they are gluten free, but they’re definitely not sugar free. These guys have coconut sugar, honey, and chocolate chips, which makes them perfect for fat Tuesday! For all of you Catholics, and non-Catholics who celebrate Lent, these are the perfect indulgence if you’re planning on giving something up tomorrow. I am giving up sugar which sounds terrible and really hard, but I am doing it and will probably enjoy a few of these bars before the day is over.
These bars are easy. Add all ingredients to a small mixing bowl, whisk to combine, add to a greased 8×8 pan and bake for 23 minutes.
So easy, really rich, and they’re paleo. This means they are a much healthier option than your standard blondie, brownie, or chocolate chip cookie bar. No excuse not to make these:)
- 1 c almond butter
- 1/4 c honey
- 1/4 c coconut sugar
- 1 egg
- 1 tsp vanilla extract
- 1/2 tsp baking soda
- pinch of sea salt
- 1/2 c chocolate chips
- Preheat oven to 350F.
- Grease an 8x8 baking pan (I use coconut oil)
- Measure all ingredients into a small mixing bowl and combine with a whisk or spoon
- Pour batter into the greased baking dish and spread out evenly
- Bake for 20-25 minutes (top will seem soft but will harden when cooled)
- Let cool 20 minutes before slicing so the bars can set
- Slice and serve
