Happy St. Patrick’s Day! This parsley steak marinade is about as close as I will get to posting a green recipe, but it works! This past weekend I had a lot of school work so I sadly had to say no to downtown green beer festivities. Instead, we had a few mimosas at a friend’s and then went to a kombucha bar to hydrate. Even though it wasn’t a bar downtown, this place was awesome and I can’t believe I didn’t know about it sooner. I am currently trying to make my own kombucha (fizzy, healthy tea) and it’s been much harder than I thought and I think ours is ruined. Happy Leaf Kombucha has had major success, though. They even have flights!
So for the marinade, it’s really easy and only made with a few ingredients. I love to make my own marinades because I can control what goes into them. When you buy a store-bought marinade there are probably 10 or so hard-to-pronounce ingredients listed and they almost always contain numerous types of sugar. It is so easy to make your own, and so much healthier.
In a small bowl or dish, combine olive oil, dijon mustard, balsamic vinegar, fresh parsley, garlic and salt and pepper. Place your steak into the marinade and cover and refrigerate until you’re ready to bake or grill.
I chose to bake our steak since Mitch did this the other night and it worked great. Enjoy this healthy marinade!
- 1/4 c olive oil
- 1/2 c water - you can use more water if you need more marinade
- 1/4 c balsamic vinegar
- 2 tbsp dijon mustard
- 1 garlic clove - minced - you can also use 1 tbsp garlic powder
- 1/2 c fresh parsley - chopped
- 1/2 tsp each salt and pepper
- Combine all ingredients in a small bowl or dish
- Place steak into the marinade and marinate your steak for minimum 2 hours before baking or grilling
