Hello everyone! How was your weekend? The weather was amazing in Texas and I got some pool time and some school work in, but Mitch was in Utah with friends and I really missed having him around. The weekend is just not the same when your roomie is gone! But, he’s back, and we’re heading to Denver next weekend for my best friend’s bridal shower, so things are realllly looking up over here. Things would be even better if I could just finish the paper I’ve been trying to write since Friday, so let’s hope I finally get that done today.
This might be the easiest recipe I’ve posted on the blog. It’s just sweet potatoes, milk, butter, salt and pepper, and really good. We always have sweet potatoes around but it’s frustrating when you go to cook one in the oven and it takes a full hour, so I decided to make a sweet potato mash that I could keep in the fridge all week when I want some sweet potatoes. They sort of resemble baby food, and you could definitely feed these to a baby or toddler, but they’re totally adult friendly and delicious.
This recipe is a bare-bones recipe, but feel free to add whatever you like. Chipotle seasoning, a little cayenne, coconut sugar if you want more sweet in your sweet potatoes, whatever you fancy. Enjoy!
- 3 medium sweet potatoes - skin removed from 2 of them
- 1/3 cup non-dairy milk (I used unsweetened plain coconut milk)
- 2 tbsp grass-fed butter
- 1 tsp salt
- 1/2 tsp pepper
- Roughly chop the sweet potatoes
- Steam for 15 minutes, or until soft
- Add the sweet potatoes with remaining ingredients to a large bowl and mash with a potato masher until you've reached desired consistency
- Taste and adjust seasonings to your liking
