- went on an amazing, extended honeymoon (sunset in fiji above and below is the cutest little pig being raised at an eco-resort we stayed at for four nights – I will touch on the AMAZING food quality in Fiji when I write our honeymoon post)
My husband’s job (ps I have probably said the word “husband” about 5 times only since we got married. Kind of like adopting the word “fiance”, it’s WEIRD and takes time) is taking us to the lovely (aka hot, sticky, humid:)state of TX beginning August 3rd! This means saying goodbye to some amazing life-long friends I have met in Denver, packing up our cute little house that we love, and getting excited about living in a super low-maintenance apartment without any of the home-owner problems we tend to face now! I am actually looking forward to the move and think it will be a fun, exciting adventure for us newlyweds. Texas also means fun cities to explore, more time with some of my friends who have moved to Texas over the years and good FOOD. Sign us up!
Now for the coffee. Mitch and I are both avid (moreso, me) coffee drinkers and had our fair share while on our honeymoon. It was hot in Hawaii (not so much in Fiji) so iced coffee’s were ordered regularly. The one problem we always ran into was that our ice would melt incredibly quickly, leaving us with a gross watered down version of our morning caffeine. So, I vowed to make coffee cubes when we arrived home to remedy this issue. Look at this cute little mini ice cube tray! As the cubes melt, you actually get more coffee, so this solution is a win win. There is no recipe here – just brew your favorite coffee, pour into ice cube trays & freeze overnight, chill the remaining coffee in the fridge, combine the cubes and the coffee the next morning and you’re done!
As soon as your cubes are frozen, pour your chilled coffee over the cubes, add sweetener and milk of choice and enjoy. So easy and so perfect for summer.
