Mondazeeee. For real. I woke up at 5am this morning and couldn’t go back to sleep which is probably the worst thing that can happen on a Monday. Any day really. I finally admitted defeat around 6:30 and started my morning ritual of checking instagram, facebook, email, then the news on my phone for 20 minutes. Does anyone else do this? I know you do. Probably everyone except my husband who is so good at not looking at his phone at all minutes of the day like me.
How was everyone’s weekend? Ours was pretty low key and we managed to not go out to eat the entire time. This never happens, but I had a lot of recipe testing to accomplish on Saturday so I figured we might as well eat the most amazing paleo eggplant parmesan that I slaved over all day. I think we both had thirds and I can’t wait to share the recipe with you. It might not be for a while because the photos turned out awful, which is the bane of my existence with blogging, but this recipe is SO good and deserves a picture equally as great.
Another one of my recipes from the weekend was this super simple kale salad. We were in Dallas a couple weeks ago and stopped at Whole Foods before driving home and they had a salad similar to this that I couldn’t stop eating. I was really impressed with the small ingredient list and loved how fresh the flavor was so I thought I would try to re-create.
This salad consists of curly kale, avocado and a tangy lemon vinaigrette that pairs perfectly with the creamy avocado. It takes about 5 minutes to throw together and you have an impressive, healthy salad to serve alongside whatever it is you’re having for dinner. You’ll love it!
- 1 bunch curly kale - de-stemmed and roughly chopped
- 2 avocados - cut into 1/2 inch pieces
- Lemon Vinaigrette
- Juice of 2 lemons
- 1/2 cup olive oil
- 2 garlic cloves - minced
- 1 tsp salt
- 1/2 tsp black pepper
- Add the kale leaves to a large bowl and massage with a couple of paper towels to remove any water from washing
- Add the avocado to the salad
- To Make the Dressing
- Combine all ingredients in a small bowl and whisk to combine
- Add the dressing to the kale and avocado, toss to combine, and serve
