It’s been a while since I posted a cookie recipe. Chocolate chip cookies are one of my favorite things ever and I never pass them up, healthy or not. But, for this blog, and for my own house, I knew I needed a healthy cookie. These are made with almond flour and gluten free oats as the base and sweetened with a small amount of coconut sugar. They are perfectly sweet, soft and definitely curbed my chocolate chip cookie craving. The rest are being taken to my friend’s house this morning so I stop eating them!
I wanted a paleo cookie, but when I added oats I ruined that, so I thought I would try a paleo cookie at the same time I was making these. That recipe used almond flour and hemp hearts instead of oats and they are gooood. The hemp hearts add a good amount of protein, so I guess I created a protein cookie! They were definitely a little flatter than the oatmeal cookies, but I think if I refrigerate the dough next time they might work better. But delicious, nonetheless. Recipe coming soon!
I love this recipe because it comes together in one bowl and you can mix it all by hand – no mixer required. They are easy to whip up when you need to satisfy your sweet tooth and you don’t need to feel guilty!
- 1 c almond flour
- 1 c gluten free oats
- 1/2 c butter (try grassfed Kerrygold!) - softened at room temperature
- 1 tbsp vanilla extract
- pinch of salt
- 1/2 tsp baking soda
- 1/4 c coconut sugar or organic cane sugar
- 1 large egg
- 1/2 c chocolate chips
- Preheat oven to 350 F.
- Line a cookie sheet with parchment paper
- Combine almond flour, oats, salt, sugar, and baking soda in a large bowl
- Add softened butter and stir - you can also use a hand mixer for this - it takes a couple of minutes to incorporate the butter into your dry mixture
- Add the vanilla extract and egg and combine
- Stir in the chocolate chips
- Using a medium-sized cookie scoop (mine was 1.5" wide) or a tablespoon, scoop the dough onto your lined cookie sheet leaving 2" between each cookie
- Bake for 9-10 minutes then remove from the oven and let cool on the cookie sheet for a few minutes
- Transfer to a cooling rack or just let them rest on your counter until cool
- Enjoy!
