The taste of FALL! My absolute favorite season is just about here and I couldn’t be happier. Even though I live in the permanent 90 degree sauna that is Houston, TX, I still have this urge to make all things fall. Pumpkin everything, honey crisp apples, chili and beer, football…these are a few of my favorite things. When I think of fall, I usually think of Graeter’s Cinnamon Ice Cream. This stuff only comes around once a year and is one of my favorite things. If you live in Ohio, go buy a scoop for me:)
This salad definitely has the fall flavors that I love. I sauteed sweet potatoes in butter and cinnamon, chopped up a honey crisp apple and added maple bacon to create a delicious, fall-like cobb salad.
The bacon and hard boiled eggs provide enough protein to keep you full, but not weigh you down. If you wanted to add another protein, grilled chicken would be an awesome choice and would go great with the honey mustard dressing. To make the dressing, simply combine all of the ingredients into a jar or container, shake or whisk, and your homemade honey mustard is ready in just a couple of minutes.

Enjoy this nutrient-rich, delicious fall salad!
- 4 large handfuls of lettuce or mixed greens (about 8 cups)
- 1 avocado - sliced
- 1 large honeycrisp apple - diced
- 4 hard boiled eggs - sliced
- 8 slices bacon - chopped
- 1 large sweet potato - diced
- 1 tsp ground cinnamon
- 1 tbsp butter
- pinch of salt
- For the Honey Mustard
- 1/2 c dijon mustard
- 1/2 c olive oil
- 2 tbsp water
- 3 tbsp honey
- 1/4 tsp fresh ground pepper
- 1/4 tsp salt
- Preheat your oven to 350 degrees
- Place your bacon onto a baking sheet and bake until golden brown and crispy
- While your bacon is cooking, dice your sweet potato and preheat a skillet on medium heat
- Add the butter to the pan and let melt, then add your sweet potatoes with the pinch of salt and cinnamon
- Let cook for about 10-15 minutes or until soft and set aside
- Add your lettuce to a large salad bowl
- While the sweet potatoes and bacon cooks, chop the apple, eggs and avocado and add to the top of the lettuce
- Chop the bacon once it is out of the oven and add to the lettuce along with the sweet potatoes
- To make the dressing, add all ingredients into a bowl or a mason jar and whisk or shake to combine
- Toss the salad with the dressing and enjoy!
