How was everyone’s July 4th? Full of delicious BBQ food, I hope! Ours was pretty uneventful, but still a great day. We got home late on Sunday night from Utah so yesterday was spent doing laundry, grocery shopping and getting unpacked from being gone for 5 days. We were so sad to come home! Utah reminded me a lot of Denver and the weather was so refreshing, so it was a little hard to come back to 90s and 100% humidity. I’m also STILL sore from our hike on Saturday – looks like I’m really out of mountain hiking shape 😉
So finally, a new recipe! It’s been ages, but I’m starting to feel somewhat creative in the kitchen again and keep writing down recipes I think of randomly throughout the day. This hasn’t happened in a while, so it’s exciting for me!
I actually just had some of this granola for breakfast and I brought a big mason jar full of granola for snacking in Utah. It made for a healthy hotel room breakfast and I was so happy I brought it! It’s also really easy to make and really versatile. You can use whatever nuts you have on hand and maple syrup or honey both work great and are equally tasty. This isn’t a paleo recipe since it includes oats, but since I got pregnant, my view on grains has changed a bit. I don’t eat cups and cups of oats a day, but I think it’s important to fuel my body and these growing babies with some healthy carbs, even if they involve grains. This granola is especially good with whole milk greek yogurt and berries – I can’t stop!
Speaking of grains and pregnancy, this would be an amazing snack to have on hand when breastfeeding. Oats have been shown to help increase milk supply, and all of the healthy fats in the coconut oil and the nuts and seeds will definitely help as well. It’s also a great alternative to sugary cereals for the kiddos. The options really are endless.

- 2 cups gluten free oats
- 1/2 cup chopped walnuts
- 1/4 cup sunflower seeds
- 1/4 cup pumpkin seeds
- 1/4 cup + 2 tbsp honey
- 1/4 cup melted coconut oil
- 1 tsp vanilla
- 1/2 tsp cinnamon
- 1/8 tsp salt
- Preheat oven to 300 F.
- Add all ingredients except the honey and the coconut oil in a large bowl and stir to combine
- Whisk together the melted coconut oil and honey and add to the dry ingredients
- Stir well to combine
- Pour the granola onto a baking sheet (lining with parchment will prevent sticking) and spread in an even layer
- Bake for 15 minutes, then stir with a spoon and place back in the oven for the remaining 10 minutes
- When the granola is out of the oven, stir one last time then let sit for an hour before serving (this helps the granola "cluster")
- Serve over yogurt, with fruit, or with milk of choice!
- The nuts I used are just a suggestion - Use any nuts you have on hand
- Instead of honey, you could use real maple syrup
