Guacamole is one of my favorite things. I basically ate the entire bowl last week after taking these pics. This version is so easy, requires just a little bit of chopping, and has a lottt of flavor! It’s definitely better than anything you can buy at the store, and rivals restaurant versions.
This guacamole isn’t anything fancy, but less is more with guacamole I think. I use a little bit of diced onion, fresh lime, diced jalapeno (or poblano if you like it very mild) and spices and everyone that eats it loves it. It’s delicious added to grilled chicken or salads for some extra healthy fat, but my favorite way to eat is is with chips or sliced veggies (but mainly chips). To keep it paleo, make sure to buy organic corn chips, not tortilla. Enjoy:)
- 3 avocados
- 1/2 jalapeno pepper - de-seeded and ribs removed
- 1/4 white or red onion - finely diced
- 1/8 tsp cayenne pepper
- 1 tsp salt
- 1/4 tsp paprika
- 2 cloves garlic - minced
- Add all ingredients to a large bowl, and either mash with a fork or a potato masher until you've reached your desired consistency
- Season with more salt or lime as needed
- Serve with corn chips or sliced vegetables of choice
