Happy Monday all! I can’t believe it’s the Monday after Christmas already. I hope Santa was good to everyone! Our family did a Secret Santa this year instead of buying everyone a gift and it was a good change of pace. Even though we love buying each other gifts, it gets so expensive. We’re still in Ohio visiting my family and are actually leaving for Detroit in an hour or so to see my parent’s Alma Mater football team play in a bowl game tonight. It should be really fun, minus the freezing rain and snow up north;) Here’s a pic of our little family on Christmas Eve at my parent’s.
I am so excited to share this recipe with you guys. It’s definitely one of my new favorites and I made it almost every week this month because it’s so easy, has SO much flavor and is amazing leftover. I love the flavor of honey mustard, and this recipe is definitely more tangy than overwhelmingly sweet, which I love.
To make this recipe, whisk together honey, dijon, water, garlic and rice vinegar and pour it over the chicken breasts in the crock pot. Set to low, and you have the most flavorful meal in 8 hours when you come home from a busy day. The best meal!
We serve ours with rice or quinoa and a salad or roasted veggies. Roasted veggies are my favorite. You and your family will love this healthy, easy chicken dish!
- 2 organic chicken breasts
- 3/4 cup dijon mustard
- 3 tbsp honey
- 1 1/2 tbsp rice vinegar
- 3 1/2 tbsp water
- 2 garlic cloves - minced
- 1 tsp salt
- 1/2 tsp pepper
- Place the chicken breasts into the crock pot
- Combine and whisk together all other ingredients in a small bowl
- Pour over the chicken
- Cook on low for 8 hours, or high for 4 hours
- Serve over rice or quinoa with roasted veggies
