Mmmm banana bread in oatmeal form. Banana bread + healthy steel cut oats + easy slow cooker = the best breakfast. You guys will love this recipe! It’s kid friendly, but will make some adults pretty happy too, and is totally reminiscent of a warm piece of banana bread. It’s also perfect for busy mornings and entertaining guests!
What makes this oatmeal healthy and worth making for the fam?
Steel Cut Oats
My favorite type of oat because they have the best chewy texture even after cooking. They’re also minimally processed when compared to flat, rolled oats. The fiber and protein in steel cut oats will keep you full all morning long and help provide you with healthy, naturally gluten free, complex carbs.
Full-Fat Organic Coconut Milk
One of my absolute favorite ingredients to cook and bake with. The high healthy-fat content helps to keep you full and satiated. Don’t go “lite” here.
Bananas
High in fiber, manganese, Vitamin B6 (hello, energy producer and hormone balancer) and potassium. Bananas are also naturally sweet which allows less sugar to be used in recipes like this oatmeal.
Walnuts
One of the healthiest nuts out there. They’re high in Vitamin E, a potent antioxidant which helps repair cellular damage in the body and Omega-3 fats which promote healthy brain function.
Cinnamon
One of my favorite spices due to the flavor it yields, but cinnamon is also a natural blood sugar regulator. The sugar spike you may feel from the bananas and steel cut oats will be slightly offset by this potent spice.
To make the oatmeal, simply combine everything in your greased cock pot and set to low overnight. You will wake up a happy camper when you smell your banana-nut breakfast.
I topped mine with fresh bananas, chopped almonds (because I didn’t have walnuts) and a sprinkle of cinnamon. Topping it off with milk and some almond butter would be amazing too. Enjoy this comforting banana oatmeal!
- 1 cup steel cut oats
- 2 bananas - sliced thin
- 1 cup chopped walnuts - or nut of choice
- 1 14 oz can full-fat coconut milk
- 2 cups milk of choice - I chose unsweetened vanilla coconut milk to keep it dairy free
- 1 tsp vanilla
- 1 tsp cinnamon
- 1/4 tsp nutmeg
- 1/4 tsp salt
- 1 tsp honey
- 1 tbsp butter
- 1 tbsp coconut oil or butter to grease the crock pot
- Grease your crock pot with butter or coconut oil
- Add all ingredients to the crock pot and stir to combine
- Cook overnight, or for 8 hours on low
- Garnish with peanut butter or almond butter, chopped nuts, bananas and milk!
