Happy Friday ya’ll! Normally I love posting a sweet treat for you on Friday, but we only have so much time till Turkey Day and we need healthy recipes. These cauliflower mashed “potatoes” are my dream. I think I’ve told you guys before that mashed potatoes used to be my favorite food. Really anything white and starchy and unhealthy. I still love them but sometimes we need a lower carb option and that’s where these come in.
Not only are they delicious, they’re really easy. All you do is remove the florets from your head of cauliflower, steam them, add whatever ad-ins you want (butter, garlic, salt, pepper #mmm) and blend, process or hand-mash. It’s that easy and I promise you won’t be disappointed. I unfortunately didn’t think to dice my garlic when I made these yesterday and thought the blender would do the trick. I realized my mistake when I bit into the biggest clove of garlic ever and almost died. I love garlic, but a raw garlic clove is definitely not my thing.
These are obviously not your Thanksgiving traditional mashed potatoes, but if you’re looking for something a little lighter and healthier that allows you to eat more of your favorite casserole or dessert, this recipe is for you. Cauliflower is also rich in Vitamin C, Vitamin K and B-vitamins which help give our immune system a nice boost around flu and cold season. You will love this nutrient-dense, low-carb cauliflower mash!
- 1 head cauliflower
- 2 tbsp veggie or chicken broth
- 1 tbsp butter
- 1 small garlic clove- minced - OR 1/2 tsp garlic powder
- 1 tsp salt
- 1/2 tsp pepper
- Remove florets from the cauliflower
- Steam the cauliflower on the stove for 20 minutes OR steam in the microwave for 5 minutes - see below notes
- Place the cauliflower and all remaining ingredients into a high speed blender or food processor and blend until smooth - OR mash by hand using a potato masher
- Taste to adjust salt and pepper and enjoy!
- To steam cauliflower on the stove, add about 1 inch of water to the bottom of your pan, place the cauliflower in the steaming basket and cover.
- To steam in the microwave, add about a 1/2 inch of water to a large glass microwave safe bowl and cover with a plate as a lid, or let steam without a lid, for 5 minutes, or until soft.

Matt and I loved this recipe! So tasty and satisfying. I was hesitant to try this because I do not like cauliflower but it was delicious. I almost prefer this taste over regular potatoes. I would definitely make this again! Thanks for the great recipes!
