Even though they may not be the most photogenic of burgers, these are amazingg and you need to try them! They’re somewhat similar to my apple, bacon turkey burgers, but this time I omitted the bacon, added caramelized sweet potatoes and chose ground chicken instead of turkey. So. good. Even with a head cold that’s resulted in a lack of taste, the flavor in these burgers really shined through and I couldn’t stop eating them. Neither could Mitchell and he ate 8 of them…
Aside from the peeling & chopping of the ingredients, these are really pretty easy and don’t take much time. It would be a huge time saver if you decided to prep (chop and even saute) your apples, sweet potatoes and onions the night before or on a Sunday in preparation for your week. Then all you would need to do is add the fillings into your meat, form burgers and bake.
We ate our burgers with mixed greens and a Dijon vinaigrette, similar to this one, but you could eat them in lettuce wraps or on a gluten free bun if you want to keep it wheat-free. The sweetness of the caramelized onions, sweet potatoes and apples comes through with each bite and compliments the chicken so well. I want one as I type this. Enjoy:)
- 2 lbs ground organic chicken
- 2 small sweet potatoes - peeled and diced
- 2 medium granny smith apples - peeled and diced
- 2 medium yellow or vidalia onions - sliced thin (big time saver if you hate chopping onions like I do!)
- 3 cloves garlic - minced
- 1 sprig fresh rosemary - stemps removed and finely chopped
- 1 tsp salt
- 1/2 tsp ground pepper
- 1-2 tbsp coconut oil or grass-fed butter
- Preheat oven to 350F.
- Prepare two baking sheets with parchment paper and set aside
- Dice the apples, onions, sweet potatoes & mince the garlic
- Heat a large saucepan over medium heat and add the coconut oil
- When the coconut oil is just about melted, add the salt and pepper, rosemary, sweet potatoes, onions, apples and garlic and saute for about 20 minutes or until the liquid in the pan has evaporated and your ingredients start to caramelize and turn a golden brown
- Remove from heat and allow to cool for about 5 minutes
- Add your ground chicken to a large bowl, add the other ingredients and mix well
- Using a large cookie scoop or 1/4 cup measuring cup, add the burgers to the parchment-lined baking sheets
- Place the burgers in your preheated oven and bake for 20-25 minutes until golden
