These pancakes are so good. They’re paleo, which means they’re free of grains, and taste just like the real thing. Made with 6 healthy ingredients using one bowl, these are so easy and ready in under 15 minutes. If you love pancakes but have been searching for a healthier way to create them, this recipe is perfect.
The original recipe doesn’t call for any flour, but I added a little to give these pancakes a more authentic, pancake feel. Top with fruit of your choice, grass-fed butter and real maple syrup.
I also love to double the recipe and eat these as I get hungry throughout the weekend.
Almond Butter Pancakes

Ingredients
- 1/2 cup almond butter
- 1/2 cup unsweetened applesauce
- 2 whole eggs
- 1/4 cup coconut flour or almond flour (or meal)
- 1/2 tsp baking soda
- 1/2 tsp cinnamon
- 1/2 tsp vanilla extract
Instructions
- Preheat oven to 350F.
- Line a baking sheet with parchment paper
- In a medium bowl, combine all ingredients and mix until combined
- Scoop the batter using a 1/4 cup onto the lined baking sheet
- Bake 10-12 minutes, until pancakes are fluffy and golden brown
- Serve hot with maple syrup, fruit, etc.
Notes
- Baking these pancakes on parchment paper is key, or else they will stick.
