Happy Monday! I can’t believe it’s already August 1st. Before moving to Texas, I was always somewhat sad to see summer go. but now that we are enduring 100 degree days with 90% humidity, I’m even more excited for fall than usual (even if it doesn’t come until October;) But that does mean grill food is around for much longer around these parts, and we can enjoy many more beer brats!
I have always loved bratwursts. Probably because they were a summer grill staple growing up, and they’re just so good. I love the flavor and the crispiness of the skin (gross, sorry) and they’re even better simmered slow with beer and onions before grilling. These are really easy and you can make them a few hours before entertaining and let them simmer on the stove while guests are hanging out. Simply remove the brats when you’re ready to grill (keeping the onions in the pot for a topper) and enjoy. You’ll love them!
- 8 bratwursts of choice - raw, not already cooked
- 4 bottles or cans of beer of choice - I used GF Omission to keep this recipe GF
- 1 onion - sliced thin
- Add the bratwursts to a large pot
- Cover with beer then add onions
- Bring to a boil, then reduce to a simmer for about an hour
- Grill the bratwursts
- Use the "beer onions" as a topper on your brat
