Happy hump day! Monday you got mashed sweet potatoes, today you get coleslaw.. Definitely not two of the most riveting recipes, but I always find myself googling for ways to make coleslaw when I make tacos, so I figured it was time to create a recipe of my own. And a healthy one.
This recipe is so easy, calls for just a handful of ingredients, and really takes tacos or anything you add it to, to the next level. It can also be prepared in 5 minutes flat. I made this recipe for fish tacos and it was the perfect addition to our spicy mahi mahi, but coleslaw is versatile and can be used however you want. Enjoy this healthier, paleo version!
Easy Coleslaw

An easy, quick, healthy coleslaw recipe perfect on its own or added as a garnish.

Ingredients
- 1/4 head red cabbage sliced thin
- 1 tsp honey
- 1 tbsp apple cider vinegar
- 2 tbsp mayo of choice
- 1/4 tsp salt
- 1/4 tsp garlic powder
- 1/4 tsp black pepper
- 1/8 tsp dried mustard
Instructions
- Place sliced cabbage into a medium sized bowl
- Combine all other ingredients in a small bowl, then pour onto the cabbage and stir to coat
- Let sit in the refrigerator until ready to use
- Use within 2-3 days
Notes
- Feel free to add sliced carrots, different colors of cabbage, sliced bell pepper, or any other veggie you like in your slaw!
