Happpy Tuesday, ya’ll. How was everyone’s weekend? Our Denver trip was short, but great, and it was so good to see friends and family. The main reason we went to Denver was for a bridal shower I threw my best friend, Jess, and it turned out really cute! My favorite part were all the moscow mule mugs that I used for decoration, but also as favors for all of the guests. Versatile and cute, and when everyone took their favor, half of my decor was cleaned up. Genius!
Anyways, back to these chipotle lime shrimp! A couple of weeks ago I went on a seafood frenzy. In just one day, I made salmon cakes, mahi mahi tacos, and two pounds of jumbo shrimp. By the end of this recipe testing day I was beyond over the smell of seafood, but so happy when I went to taste everything, especially these shrimp. If you buy shrimp that are already peeled and deveined, this recipe is SO simple and fast, but if you’re like me and didn’t think ahead, you’ll be pretty unhappy for about 20 minutes while peeling and deveining. But, it’s worth it.
The marinade on these shrimp is really easy, and they only need to marinate for about 20 minutes before being cooked. In this 20 minutes your entire kitchen could be cleaned;) Shrimp are great because they only need to cook for about 2 minutes per side, then they’re done, meaning your entire meal is ready in about 30 minutes (if you don’t peel and devein!). You will love the flavor on these shrimp and they are easily one of my new favorite dishes. Serve them with roasted veggies or over rice!
- 1 lb raw peeled and deveined wild jumbo shrimp
- Juice of 2 limes
- 2 cloves garlic - minced
- 2 tbsp sauce from a can of chipotle peppers in adobo sauce
- 2 tbsp extra virgin olive oil
- 1/2 tsp salt
- 1/4 tsp pepper
- Combine all ingredients (minus the shrimp) in a small bowl to make your marinade
- Place the shrimp in a glass tupperware and pour the marinade over
- Refrigerate for 10 minutes
- Preheat a large skillet on medium heat and add the coconut oil
- Place the shrimp in one layer in the pan, pour the rest of the marinade onto the shrimp and cook for 2 minutes (max) then flip and cook for another 2 minutes on the other side
- Promptly remove the shrimp from the pan and serve
- You can serve the shrimp over rice, as tacos, or any creative way you think of!
