You guys! It’s been quite a while since I posted when of these posts. Actually, I’ve only posted one. Truthfully, I thought I would be more gung ho about posting about what I eat in a day, but it’s mainly just shed light on how little variation I have in my diet lately. But, today you get a little taste of what I’ve been eating.
Every morning I wake up and drink one of these mason jars full of water. It’s about 32oz. If you’re like me, and just about everyone I know, you’re probably trying to drink more water throughout the day. This is SUCH a great habit to get into. I drink it while my water boils for my french press and while I wait for my coffee to be ready.
After water, it’s Bulletproof Coffee. I use a french press these days. Mitch and I got them as a wedding present and I am obsessed. I was starting to get a little grossed out by what was actually inside the water compartment of my old coffee maker, and I don’t like how k-cups can’t be recycled, so this is the best option for me. And I’m kind of a coffee snob and the coffee that a french press makes – AMAZING. It’s almost espresso-like, so rich, and very concentrated. My favorite. We have these.
If you don’t know what Bulletproof Coffee is, it’s coffee blended with coconut oil and grass-fed butter (Kerrygold). We add milk and cinnamon to ours too. This gives me an extra boost of healthy fat in the morning and ensures I don’t absorb the caffiene too quickly and crash at 11am. In fact, I never crash when I drink Bulletproof. When you’re done blending your hot coffee with the butter and coconut oil you’re left with the creamiest latte-like drink. Try it!
About an hour after I have my coffee (which lasts me forever) I have breakfast. Yesterday it was unsweetened whole milk yogurt, chia seeds, fresh blackberries, cinnamon and a drizzle of maple syrup. This is my go-to breakfast at the moment because Mitch bought the largest container of yogurt ever and it’s really easy to make in the morning. It’s also SO good.
A couple hours after my yogurt and after a long dentist appointment (new dentist appointments take so long!), I was pretty much starving and was so happy we had leftover crock pot chicken tikka masala in the fridge.
This was the most satisfying lunch and perfect for our cold drizzly day we had yesterday. Looking at that pic makes me so hungry! A few hours of work later, and I needed a snack. Yesterday I had half of a Pink Lady apple and almond butter to tide me over before dinner. This is definitely one of my go-to snacks if we don’t have fresh berries.
For dinner we had the most amazing crock pot black bean soup that I smelled cooking allll day long. This almost makes dinner taste better when you can finally sit down and eat it. I can’t wait to post this recipe for you guys! We also had a roasted parsnip and carrot salad with toasted cashews. This is a go-to salad for us and I always use different veggies. I let the veggies roast while I make the rest of dinner, quickly toast the cashews for about 5 minutes in a saute pan and make the salad dressing. We love this apple cider vinaigrette.
I’m leading a 7-Day Sugar Reset this week so had to forgo my usual chocolate, but normally I have some dark chocolate chips or a few squares of a chocolate bar for dessert. Then I drink a cup of decaf tea before bed, and that’s all she wrote. I’m also addicted to Lacroix and have about 3-4 throughout the day…so good, even if Mitch thinks it’s a huge waste of money:)
I promise not to wait so long to post again – my goal is to post these every other week. I hope this was a fun peak into my day!
