Healthy cookies that I promise are SO good. I love to eat healthy, but I also love cookies, so I need recipes like this in my life. I have made them on Sundays for the past 3 weeks and like to freeze whatever I don’t eat.
They’re dairy, grain and egg free and use only a few tablespoons of honey or maple syrup as a sweetener. So satisfying when you need something sweet!
Paleo Chocolate Chip Cookies

Ingredients
- 2 cups almond flour (or meal)
- 1/4 cup coconut oil (melted)
- 3 tbsp pure maple syrup (I ran out of maple and used honey and this worked great)
- 1/4 tsp sea salt
- 1/2 tsp baking soda
- 1-2 tsp vanilla extract
- 3/4 cup chocolate chips (I used semi-sweet, but dark would work great)
Instructions
- Preheat oven to 350F.
- In a bowl, whisk together almond meal, salt and baking soda
- Add coconut oil, maple syrup and vanilla and mix well
- Fold in the chocolate chips
- Drop better by rounded teaspoons onto a baking sheet lined with a silpat or parchment paper
- Bake for 7 minutes until edges just begin to turn golden (don't over-bake or they will be dry)
- Let cool and store in an airtight container
- Freeze leftovers for quick sweet fixes
Notes
- For a nut free version, I would assume coconut flour would work great, but I haven't tried it.
