These tacos! Pretty and photogenic, and so tasty. I am not nearly as excited about the filling as I am the shells. They’re paleo, nut-free and already on the blog. You don’t have to go to the effort to make a paleo shell, but they’re oh so good and there’s nothing like a buttery, warm tortilla. They tack on some cook time and might make your kitchen a little smoky, but do it!
The sweet potato and Italian sausage filling is delicious, but feel free to use your favorite taco filling. Maybe you want something more conventional like taco meat, but if you’re in the mood for something different, I highly recommend this combo. They would also be amazing as breakfast tacos if you added scrambled eggs to the mix. YUM. Or a fried egg, which is always a good idea. Enjoy these healthy pieces of taco heaven!
- For the Filling
- 2 large sweet potatoes - diced
- 1 lb Italian sausage - uncooked
- 1 small onion - diced
- 3 cloves garlic - minced
- 1 tbsp cumin
- 1 tsp chili powder
- 1/2 tsp paprika
- 1 tsp oregano
- 1 1/2 tsp salt
- 1/2 tsp pepper
- 2 tbsp coconut oil
- For the Shells

- Toppings
- Cilantro
- Avocado
- Salsa
- Hot Sauce
- Fresh lime
- Chop veggies and set aside
- While chopping the veggies, cook your sausage in a large skillet then remove and set aside
- Add the coconut oil to the pan then saute your onion and sweet potatoes for about 10 minutes, or until soft
- **While your sweet potatoes and onion are cooking, prepare your tortilla batter if you are making them and cook the tortillas as the potatoes cook
- Add garlic, spices and sausage to the sweet potato mixture and cook for another 3 minutes
- Add the sweet potato and sausage filling to your shells and top with toppings of choice
