I know I am supposed to be sharing a What I Ate post today, but I realllly wanted to share this recipe. If I shared what I have been eating lately you’d be really bored anyways. I am basically snacking on fresh fruit and almond butter all day long because I’m lazy/super busy with homework this week. More variety and share-worthy foods next week!
So, I love chicken tenders. Especially when they come with about 5 dipping sauces. I always have and I think I always will, so this is a recipe I needed in my life. I honestly feel good eating these chicken tenders since they aren’t fried (although frying them in coconut oil sounds amazing) and the breading is made with almond flour (naturally gluten free). They’re also really simple to make and just a little messy! These are the tenders after they’ve been dipped in the egg and almond flour mix.
These little guys only bake for 20 minutes, then dinner is served. I made sweet potato oven fries to go with ours, but any baked veggie would be great. Try tossing your veggies of choice in coconut oil, salt, pepper and garlic powder and baking them at the same time as the tenders. Two dishes come out of the oven at once – the best.
We chose to dip ours in homemade honey mustard – see this recipe if you want to make your own like we did. If you are a chicken tender lover like me, these will become a staple in your household. They’re also perfect and fun for the kiddos in your life!
- 3 chicken breasts - sliced into "tenders"
- 1 1/4 c almond flour
- 1/4 c + 1 tbsp tapioca starch or flour
- 2 tbsp white sesame seeds
- 1 tsp garlic powder
- 1 tsp dried mustard powder
- 1/2 tsp paprika
- 1/2 tsp salt
- 1/2 tsp pepper
- 1/4 tsp cayenne
- 3 eggs
- 2 tbsp coconut oil
- Preheat your oven to 400 degrees F.
- Line a baking sheet with parchment paper
- Slice your chicken breasts into tenders and set aside - each tender should be about 1 inch wide
- Combine all dry ingredients into a large bowl and set aside
- Whisk the eggs into a medium sized bowl and set aside
- Dip the chicken tenders into the egg mixture, then into the flour mix and lay onto the baking sheet
- Drizzle the tenders with the coconut oil
- Bake for 20 minutes or until golden brown
- Serve with condiment of choice!
